Tomato & bean soup

Ingredients

  • Cheese, parmesan

    (8 tbsp) 40g

  • Kidney beans, tinned and drained

    190g

  • Tomatoes, chopped, tinned

    185g

  • Garlic

    (1 pc) 5g

  • Onion

    (0.2 pc) 15g

Method

  • Put the onion, garlic, chilli, tomatoes, and drained kidney beans into a pot
  • Add water to the pot so that the ingredients are covered
  • Simmer on a low heat until soft and season with salt and pepper
  • Remove the pot from the heat and add the grated cheese - you can use lactose free cheese, if you'd like
  • Blend the mixture with a hand blender or in a food processor until smooth and serve
