Lentil & cauliflower soup

Ingredients

Method

  • Roughly chop the cauliflower and simmer it in water with the lentils
  • When soft, drain and save the water
  • Allow the cauliflower and lentils to cool slightly before transferring to a food processor and blending
  • Add the cream cheese and oil
  • Add a little of the water you drained and saved from the cauliflower and lentil mix earlier if the soup is too thick
  • Season with salt, pepper and thyme, and blend once more
