Chicken & bean soup

Ingredients

  • Tomatoes, chopped, tinned

    470g

  • Chicken breast

    (0.5 pc) 80g

  • Kidney beans, tinned and drained

    100g

  • Olive oil

    (0.5 tsp) 7g

  • Cheese, parmesan

    (2 tbsp) 10g

  • Garlic

    (1 pc) 5g

  • Red onion

    (0.2 pc) 15g

Method

  • Heat the oil in a pan over a medium heat. Add the chicken and fry until golden brown. Remove from the pan and set aside
  • Chop the garlic, onion and chilli and fry in the same oil
  • Add the chopped tomatoes, beans and a little water
  • Bring to the boil then simmer for 10 minutes
  • Add the cooked chicken, serve and scatter the cheese on top
