- Soak the dates in water for 10 minutes to rehydrate, then drain and roughly chop
- Preheat the oven to 170°C / 150°C / gas mark 5
- Mash ripe bananas in a large mixing bowl
- Add the dates, cream cheese, egg yolks, cottage cheese and a pinch of salt to the mashed bananas and mix gently to combine
- Whisk the egg whites in a sepaate bowl until white and foamy
- Gently fold the egg whites into the cake batter
- Grease a cake tin/mould and pour in the batter
- Bake in the oven for 50 - 60 minutes
- Leave the cake to cool completely before cutting into it and serving
