Ingredients

  • Cottage cheese

    (0.6 cups) 130g

  • Cream cheese, reduced-fat

    (3.7 tbsp) 55g

  • Dates, pitted

    (4 pc) 25g

  • Banana

    (0.5 pc) 60g

  • Eggs

    (1 pc) 55g

  • Olive oil

    (0.1 tsp) 2g

Method

  • Soak the dates in water for 10 minutes to rehydrate, then drain and roughly chop
  • Preheat the oven to 170°C / 150°C / gas mark 5
  • Mash ripe bananas in a large mixing bowl
  • Add the dates, cream cheese, egg yolks, cottage cheese and a pinch of salt to the mashed bananas and mix gently to combine
  • Whisk the egg whites in a sepaate bowl until white and foamy
  • Gently fold the egg whites into the cake batter
  • Grease a cake tin/mould and pour in the batter
  • Bake in the oven for 50 - 60 minutes
  • Leave the cake to cool completely before cutting into it and serving
