- Preheat the oven to 200°C/180°C (fan)/gas mark 6
- Chop the apple and dates into small pieces
- Add to a saucepan with a small splash of water
- Cook on a low-heat until the mixture thickens to a caramel. Add more water, if necessary
- Blend the remaining ingredients in a food processor
- Fill each muffin mould 1/3 of the way up with the batter
- Add a teaspoon of the caramel sauce into the centre of each mould
- Finish with more batter to cover the caramel sauce and seal the muffins
- Bake in the oven for 15-20 minutes
- Quick tip. Fill the muffin moulds 3/4 of the way up. Leave some space for them to rise and expand
