Broccoli soup

Ingredients

Method

  • Soak the cashews for 10 minutes
  • Chop the onion, garlic and broccoli and add them to a large pot over a medium heat
  • Add the vegetable stock
  • Boil for 10-15 minutes until soft
  • Drain the cashews and add them to the other veg
  • Blend with a hand blender or transfer to a food processor and blitz until smooth
  • Season to taste with salt (optional), pepper and chilli (optional)
