Sweet potato & courgette fritters

Ingredients

  • Cheese, mozzarella

    60g

  • Sweet potato

    (0.4 pc) 50g

  • Almond flour

    (1.3 tbsp) 10g

  • Coconut oil

    (0.4 tbsp) 5g

  • Eggs

    (1 pc) 55g

  • Courgette

    (0.7 pc) 140g

  • Onion

    (0.1 pc) 10g

Method

  • Preheat the oven to 220°C/200°C (fan assisted)/gas mark 7 and line a baking tray with baking paper
  • Grate the courgette in a food processor
  • Transfer to a bowl and squeeze the courgette tightly in your hand over the sink to remove excess water
  • Grate the sweet potato and onion and add it to the bowl with the courgette
  • Melt the coconut oil in a bowl in the microwave, add the eggs and whisk
  • Add the eggs to the courgette and potato and season with salt, pepper and chilli powder
  • Add the flour and mix to combine
  • Mould the mixture into round patties with damp hands. Each fritter should be around 2-3 tablespoons of mixture
  • Place the fritters on the baking paper and bake in the oven for 15 minutes or until golden brown
  • Flip the fritters and cook for another 15 minutes
  • Serve and top with grated mozzarella
