Smoked chicken & sweet potato fries

Ingredients

  • Chicken breast
  • Sweet potato
  • Coconut oil
  • Yoghurt, Greek, full-fat
  • Red cabbage

Method

  • Preheat the oven to 220°C/200°C (fan assisted)/gas mark 7 and line a baking tray with baking paper
  • Cut the sweet potato into chips or wedges and place them on the baking tray. Drizzle the remaining oil on top and season with salt, pepper and rosemary
  • Pour half the melted coconut oil over the chicken. Season with smoked paprika, salt and pepper and add to the same baking tray
  • Bake in the oven for 20 minutes
  • Finely slice the red cabbage and mix together with the yoghurt and mustard. Season with salt and pepper and mix to combine
