Scrambled eggs with goat's cheese & mushrooms

Method

  • Preheat the oven to 200°C
  • Remove the stem from the mushrooms and place it on a lined baking tray
  • Drizzle half of the melted coconut oil over the mushrooms and season with pepper
  • Bake in the oven for 15-20 minutes or until cooked
  • Cut the goat's cheese into pieces and chop the chives
  • When the mushrooms are almost cooked heat the remaining oil in a pot over a low heat
  • Add the eggs, goat's cheese and chives to the pot and stir gently and constantly over a low heat
  • Season with salt and pepper
  • Put the mushrooms on a plate and spoon the scrambled egg on top
  • Eat the banana for dessert
