Salmon & broccoli rice

Method

  • Preheat the oven to 200°C/180°C (fan assisted)/gas mark 6
  • Boil the rice according to the instructions on the packaging
  • Chop the broccoli and add to a baking tray
  • Lay the salmon on foil, season with salt, pepper and lemon juice
  • Wrap, place on the baking tray with the broccoli and bake for 12-15 minutes
  • Serve the rice, salmon and broccoli and add a little thyme on top
