Salmon & egg noodles

Method

  • Preheat the oven to 200°C/180°C (fan)/gas mark 6
  • Lay the salmon on foil, season with salt, pepper and lemon juice. Wrap and bake for 12-15 minutes
  • Boil the rice noodles according to the instructions on the packet
  • Beat the eggs
  • Drain the noodles and transfer them back to the saucepan. Keep the saucepan on a very low heat
  • Add the pesto and eggs to the noodle pot and gently stir until the eggs are cooked
  • Remove from the heat and season with salt and pepper
  • Serve the egg noodles with the baked salmon
