Halloumi & quinoa salad

Ingredients

  • Cheese, halloumi

    50g

  • Quinoa

    25g

  • Tomatoes, sun-dried

    25g

  • Olive oil

    (0.4 tsp) 5g

  • Cherry tomatoes

    (4 pc) 55g

  • Cucumber

    (0.2 pc) 40g

  • Red onion

    (0.2 pc) 15g

  • Spinach

    (1 handfuls) 30g

Method

  • Cook the quinoa according to the instructions on the packet
  • Slice and fry the halloumi in a hot pan
  • Chop the sundried tomatoes, cucumbers, tomatoes and red onion and add them to a large bowl
  • Add the spinach and quinoa to the bowl
  • Mix the oil, lemon juice, salt and pepper together, pour it over salad and toss to coat
  • Serve and top with the halloumi
