Black bean quesadillas

Ingredients

  • Tortilla, wholemeal

    (1 pc) 45g

  • Cheese, cheddar

    30g

  • Black beans, tinned and drained

    95g

  • Spring onions

    (1 pc) 20g

  • Rocket

    (0.5 handfuls) 10g

Method

  • Chop the spring onions, chilli and coriander and add to a large bowl
  • Add the beans, cheese, cumin and lime juice and mash together with a fork or potato masher
  • Season with salt and pepper
  • Heat a large frying pan over a medium heat
  • Spread the mixture over half of the tortilla, fold in half and press together
  • Add to the pan and fry for 3-4 minutes on each side until golden brown - press the quesadilla down with a spatula now and again to bind it together
  • Remove from the pan, cut into wedges and serve with rocket
