Black bean fritters

Ingredients

  • Black beans, tinned and drained

    95g

  • Corn flour

    (2.5 tbsp) 25g

  • Eggs

    (2 pc) 60g

  • Yoghurt, Greek-style, coconut

    (2.8 tbsp) 55g

  • Olive oil

    (0.3 tsp) 4g

  • Spring onions

    (1 pc) 15g

  • Rocket

    (0.5 handfuls) 10g

Method

  • Add the beans and spring onions to a food processor and blend until roughly chopped
  • Add the flour, smoked paprika and eggs, season with salt and pepper and blend again
  • Heat the oil in a large pan over a medium-high heat
  • Shape the mixture into palm-sized patties and add to the pan
  • Fry for 3 minutes on each side until golden brown
  • Mix the mint and yoghurt together and serve with the fritters and rocket
