Black bean burrito

Ingredients

  • Tortilla, wholemeal
  • Eggs
  • Cheese, feta
  • Black beans, tinned and drained
  • Olive oil
  • Peppers
  • Red onion

Method

  • Chop the onion, pepper, feta, coriander and chilli
  • Heat half of the oil in a pan over a medium heat, add the onions and peppers and fry for 5 minutes
  • Add the beans to the pan and cook for 2 minutes
  • Remove the bean mix from the pan and lay it on your tortilla
  • Put the pan back on the heat and add the remaining oil and eggs
  • Season with salt and pepper (optional) and cook over a low heat for 2-3 minutes - stir constantly to stop the eggs from sticking to the pan
  • Add the eggs to the tortilla and top with feta, coriander and sriracha sauce for an extra kick (optional)
