Beetroot & feta omelette

Ingredients

  • Eggs

    (2 pc) 110g

  • Cheese, feta

    30g

  • Pear

    (0.7 pc) 120g

  • Beetroot, cooked

    (1.8 pc) 150g

  • Coconut oil

    (0.2 tbsp) 3g

  • Onion

    (0.3 pc) 20g

Method

  • Chop the onions, beetroot and feta
  • Heat the oil in a pan over a low heat, add the onions and fry for 5 minutes until soft
  • Whisk the eggs in a bowl and season with salt and pepper
  • Add the eggs to the pan, crumbe the feta into the pan and add the beetroot
  • Cover with a lid and cook over a low heat for a few minutes until cooked
  • Scatter the fresh coriander on top and serve
  • Eat the pear for dessert
