Ingredients

  • Tortilla, wholemeal

    (1 pc) 40g

  • Beef mince, 10% fat

    60g

  • Cheese, cheddar

    10g

  • Sweetcorn

    30g

  • Kidney beans, tinned and drained

    35g

  • Olive oil

    (0.2 tsp) 3g

  • Garlic

    (1 pc) 5g

  • Red onion

    (0.2 pc) 15g

  • Tomato Passata

    (3 tbsp) 30g

  • Peppers

    (1 pc) 75g

  • Lettuce

    (1 handfuls) 36g

Method

  • Chop the garlic, onion, and peppers
  • Heat the oil in a pan, add the garlic, onion, and peppers and fry for 6 minutes
  • Add the mince and beans to the pan and fry for a further 2 minutes until the mince browns
  • Season with fajita seasoning
  • Add the tomato passata and stir well to combine
  • Warm the tortilla for 30 seconds in the microwave or in a pan
  • Lay the tortilla flat and add the lettuce, cooked vegetables, mince, corn and cheese
  • Roll up into a burrito and enjoy
  • If you can't find a healthy, sugar-free fajita seasoning, make your own. Just add chilli, paprika, cumin, salt and pepper instead
