Beans on Toast

Ingredients

  • Bread, Sourdough rye

    (2.4 slices) 60g

  • Butter beans, tinned and drained

    (5.8 tbsp) 115g

  • Cheese, parmesan

    (3 tbsp) 15g

  • Olive oil

    (0.3 tsp) 4g

  • Tomatoes, chopped, tinned

    80g

  • Honey

    (0.1 tbsp) 3g

Method

  • Heat the oil in a saucepan over a medium heat
  • Add the chopped tomatoes and beans and bring to a boil
  • Reduce the heat to low and simmer for 5 minutes, stirring occasionally. Add a splash of water, if necessary
  • Add honey, mustard, a splash of Worcestershire sauce, smoked paprika, salt and pepper
  • Stir and simmer for a few more minutes
  • Toast the bread, top with the beans and grated parmesan
