Ingredients

Method

  • Preheat the oven to 200°C
  • Mash the banana in a bowl with a fork - the older the banana, the better and sweeter they are
  • Add the oats, honey and eggs to the bowl
  • Season with cinnamon and a pinch of salt and stir
  • Divide the mixture equally into palm-sized cookies and place on a non-stick baking tray
  • Bake in oven for 25-30 minutes or until golden brown
  • Serve alongside a glass of hot or cold milk
  • TIP > You can adjust the cooking time depending on how you like your cookies. Shorten the cooking time if you like softer, chewier cookies or leave them a little longer if you prefer a bit of crunch
