Beetroot hummus with crudites

Ingredients

  • Chickpeas, canned and drained
  • Tahini
  • Olive oil
  • Beetroot, cooked
  • Cherry tomatoes
  • Peppers
  • Courgette
  • Cucumber
  • Garlic

Method

  • Blitz the beetroot, chickpeas, sesame seeds, lemon juice, oil, garlic, cumin, salt and pepper together in a food processor
  • If the mixture is too thick add more lemon juice or a small splash of water. Repeat until you have a smooth consistency
  • Chop the remaining veggies into batons and serve alongside the hummus
