To lose weight/fat mass you have to starve yourself

Definitely not. Being in an energy deficit can increase hunger sensations so there is no need to starve. Hunger is caused by many hormones and other factors which can all be managed using a well-designed dieting approach. Constant hunger is one of the best tell-tale signs of a poorly constructed diet and there is no way you will be able to follow a diet that leaves you hungry for a longer period.  If you have been made to starve, please confront your coach or find a new one.

In order to lose or gain fat/muscle mass you have to consume certain foods and shun others

Again this is not true. Whatever your goals are, no food source should be prohibited (except for medical reasons). However, we can talk about whether or not it's useful to consume this or that food. Some foods are better at satiating hunger, while others provide better nutrients for our goals. So, for example, it's not particularly wise to consume a lot of high-calorie ice cream when you're dieting – it just takes up too much of your daily energy allowance.

There is no reason to make things so strict black and white. Different people have different life styles, different goals and different methods available to reach those goals.
